Instructions

  1. Place ¼ C almond flour, ¼ C heavy whipping cream, ¼ tsp nutmeg, ¼ tsp cinnamon and 3 Tbsp Swerve into a saucepan over medium heat. Bring to just under boiling.

  2. Whisk the egg yolk in a bowl.

  3. Slowly add in a bit of the mixture from the saucepan into the bowl with the egg yolk, and whisk continuously as you do.

  4. Once tempered, whisk the egg yolk into the saucepan, and whisk to combine.

  5. Simmer for another 2 minutes, remove from the heat and stir in ¼ tsp vanilla. Let cool.

  6. In a bowl, blend together the crust ingredients until well combined.

  7. Press the crust mixture into the bottom of a well greased springform pan.

  8. Beat together the cream cheese, ½ cup heavy whipping cream, ½ tsp nutmeg, ½ tsp cinnamon, ½ C Swerve, 1 tsp Vanilla and ⅓ C of the reserved eggnog mixture until smooth and creamy.

  9. Spread the filling over the crust and chill overnight.

  10. Dust with cinnamon before serving.
